Confit turkey wings

Turkey wings are one of the few really meaty cheaper cuts of poultry, turkey drum stick are great cooked in the same way.

Trim and wash the turkey wings, pat them dry and then rub them with crushed juniper, dried orange zest, black pepper, salt and thyme.  Allow the wings cure for a few hours with this mix on them to really absorb the flavour.  Rinse most of the salt rub off after a few hours then vacuum pack on high.  Turkey wings cook at 75C for 12 hours.

To finish the wings place under a hot grill in a single layer on baking paper turning once to get a golden brown.

Serve with a salad of orange segments and rocket.
